  1. Get 1 kg basmati rice
  2. Prepare 1.5 kg boneless chicken
  3. Make ready 1/2 kg potatoes, peeled and fried till golden

  5. Make ready 1 tsp green chilli paste
  6. Make ready 1 tsp jeera powder
  7. Make ready 1 tsp dhania powder

  10. Prepare 1/2 tsp red chilli powder
  11. Get 2 cups fried onions
  12. Prepare 300 gms curd
  13. Get 1 cup coriander leaves
  14. Prepare 1 cup mint leaves
  15. Prepare 1 Juice of lemon
  16. Prepare 4 tomatoes, chopped
  17. Take 6-8 green elaichi
  18. Get 8-10 cloves
  19. Make ready 3-4 black elaichi
  20. Make ready 1 inch dalchini
  21. Take 1/2 tsp nutmeg powder
  22. Prepare 2 tej patta
  23. Take 2-3 tsp kewra water
  24. Prepare as required Oil
  25. Make ready 1 small Coal for dum
  26. Get to taste Salt
  27. Get as required Red, yellow and green food colour
  28. Take 1 tbsp ghee
Instructions to make Chicken Dum Biryani:
  1. In a vessel, prepare the marinade for the biryani. Mix together chopped tomatoes, curd, fried onions, haldi, red chilli powder, dhania powder, jeera powder, garam masala powder, nutmeg powder, salt, ginger garlic paste, green chilli paste, lemon juice, half of the coriander leaves and mint leaves and half of the garam masala. Nicely wash the chicken pieces and add to the marinade. Mix well and set aside for 3 to 4 hours.
  2. Place a red hot piece of coal in the marinated chicken and pour some ghee over it. Cover and let it sit for 10 minutes. Boil the rice with the remaining whole garam masala, kewra water and salt. Once it is 80% cooked strain and set aside. In a vessel pour some oil. Spread a very thin layer of rice, then the marinated chicken and fried potatoes. Now add a layer of rice and sprinkle some coriander and mint leaves and fried onions, some food colour and few dots of ghee.
  3. Repeat the layer of rice, coriander and mint leaves, fried onions, food colour and ghee. Cover the vessel with a wet cloth and a tight lid with a heavy weight on top. Place the vessel on a tawa and cook on simmer for 1 hour. The brightens up once the biryani is ready.
  4. Serve the biryani hot either by mixing it up or layering the rice first in the plate topped with the masala and chicken. Enjoy!
