Steps to make Chicken Biryani (UP style):
- Wash and soak basmati rice for 1 hour.Keep aside.
- Heat oil /ghee in a pan.Slice 2 onions longitudinally and fry till golden brown.Take out and keep aside.
- Chopped 2 remaining onions,fry in the remaining oil.Fry till golden.Add ginger garlic paste and green chillies..Saute for 1 minute.
- Add chicken,all powdered spices and all coarsely ground spices.Add bay leaves also.Stir and add curd.
- Add salt and 1 cup water cover and cook for 5 minutes on medium flame.After 5 minutes open the lid,stir the chicken well and cook till oil separates.
- Add basmati rice and 4 cups of hot water to the chicken.Cover and cook on high flame till boil.
- Lower the flame to sim and cook till rice is done.Add kewra water.Dissolve orange food colour in 1/4cup milk and pour over biryani.Cover the lid and leave for 10 minutes.
- Garnish with fried onion and serve hot with raita /salad.
